smoking meats, cheeses and whatnot. just about to vacuum pack 10lbs of cheese i smoked this afternoon, with about 10lbs of beef and elk jerky in the brine to be smoked on sunday. any other smoker enthusiasts here?

Any pics of your smoker? What temp do you smoke your cheese at?
93, W350, auto, DTT convertor, 4.10's, GDS 60mm with 14cm, piston l/p, 2nd gen air horn. 366 spring. boost, and pyro.
91, W250, 360 gas, auto, 4.10
95, 2500, 4/4, 5" turbo back. So far.

Just kidding. I don't smoke, but I do grow meat. 8)

i just use a big chief. i've done it 2 ways:

1. use the big chief as normal, just cycle it on/off about every 15 minutes, time might vary though. i try to keep it under 80*, as soon as it gets around 90* it starts to melt pretty quick. ( i learned the hard way, but it still tastes good)

2. i made a chip pan similar to this: http://www.amazenproducts.com/ProductDe ... e=AMNPS5X8

then i vacuum pack it all and put in the fridge for about 2 weeks or more to let the smoke even out through the cheese
