95 Dodge 2500 ABS/Brake Issues

Traded the old plow rig for a new one, a 95 Dodge 2500 with the V10. Needs all new brake lines, as well as a master, calipers, etc. I found out I've got 4 wheel ABS, and id like to eliminate the system all together. I notice the proportioning valve under the master, but not sure what the other alum block is the lines go into.
Biggest issue is making sure the speedo still works after removal, as I've read conflicting reports the speedo runs off the abs deal.
Also wondered if I can upgrade the rear shoes to 3.5" vs the 3" it has now, like we can on the 1st gens
