Doing both keeps your hitch up and keeps your geometry where you want it the best for maximum traction. If you just block it and run a single you can still deflect the leaf springs if they arent very heavy and still get axle wrap. If you just wanted to run one link and a block you can mount it above and below the axle at the rear to keep it from wrapping.
