the wires and tubing from the dash pod are normally covered in wire loom thats painted to match. i am in the process of making -4 braided hoses for the fuel and oil pressure to get rid of the plastic tubing. the truck makes over 80 lbs of oil pressure on cold mornings  and i'm pretty sure the plastic tubing isn't designed to handle that. the fuel is only about 6 lbs now but the piston pump should increase that.

I don't know if you would get a proper reading off it but there is a spare port in behind the turbo with a plug in it. I am using it to supply oil to my bypass oil cleaner but you might be able to set it up with a temperature sending unit instead of drilling the pan.
The only problem i can see is because it is right in the block you may get the block temp instead of the oil temp.

You could also tee off the stock oil pressure sender on top of the oil filter

I thought about tee-ing in but the its a mechanical guage and the probe is big, almost o2 sensor size. I bought the bung for the probe when I bought everything else so I plan to drill a hole and weld the bung to the pan. I've put that off until I move all the gauges to the crew cab 4wd dually project. the engine is out so it will be a lot easier to get too.
