Have that issue here in Michigan as well. If it sets, it rusts, especially when it gets cool at night, and warms up fast, like late spring/early summer. Seems the more humid it is, worse off it is.
Gets even worse inside say a building, like a pole barn. I've found leaving the windows open, or a door and a fan blowing helps keep the moisture from settling, helps balance the temps.
Another, messier idea that has worked for us on trucks with extended sit times (read junk/or project trucks) is to power wash them, then coat every surface with a mixture of bar oil, diesel and atf. It sticks well, and repels rain pretty good. But it sucks to work on them later, without cleaning everything off again
