I would run that pressure switch through the shut down solenoid circuit, with a manually operated spring loaded over-ride switch. That way, it will kill the engine, and not starve the fuel injection pump when the lift pump shuts off. Just start the engine normally. All you'll need to do, is hold the switch at start up, then let go when it starts. Lose oil pressure, engine dies (unless you hit the over-ride). The over-ride will also allow you to get to a safe spot on the shoulder (or off the street).
