Where is a good location on the engine to plug the sensor for an aftermarket water them gauge? I plan to keep the stock plug for the dash gauge so I'm looking for a different place on the engine better if possible.

If it's not being used, you can put your temp probe there...otherwise, on the top of the thermostat housing (at least on mine) there's a threaded plug that I think would work nicely...
Why use an aftermarket temp sender? Use a ford sending unit (like the one that you took out of the orginal engine) that'll plug into your stock harness, and put it in the original location...plug and play. The threads should be the same, and if not, you can use a bushing to fix that problem.
